Legendary Basque Cheesecake (San Sebastian)

Ingredients:
• 450 g cream cheese, softened
• 150 g sugar
• 3 g salt (½ tsp)
• 3 eggs
• 5 ml vanilla extract (1 tsp)
• 300 ml heavy cream (33–36%)
• 15 g cornstarch (3 tbsp)

Instructions:
1. Preheat the oven to 240°C (450F)
2. Line a springform pan 7 inch (about 18×7.5 cm) with parchment paper.
3. In a bowl, beat the softened cream cheese until smooth (about 2 minutes).
4. Add sugar and salt, then beat for another 15 seconds.
5. Add the eggs one at a time, then add vanilla and heavy cream — mix until combined.
6. Sift in the cornstarch and mix again until smooth. Scrape down the sides and bottom of the bowl.
7. Pour the batter into the prepared pan. Gently tap the pan on the counter to release air bubbles.
8. Bake for 30 minutes or until the top is a deep golden brown.

Before serving, the cheesecake should be chilled for at least 2 hours, preferably overnight.

• 3 large eggs
• 15 g fresh lemon juice
• 7.5 g vanilla extract
• 2.5 g sea salt
• 250 g heavy whipping cream
• 15 g all-purpose flour
• 75 g black sesame paste
